Kemah Texas Cruisers Chili

S/V Namaste’

2lb ground beef

2lb seasoned shredded pork (recipe below) You can use all beef, if you have no pork.

4 large onions diced

4 fresh jalapeños seeded and chopped

2 garlic bulbs pealed and chopped

4 cans diced tomatoes (14.5 oz) with juice

2 cans La Costena Frijoles Charros beans (560g) with juice

2 cans La Costena Beans (560g) with juice

3 cups water

1/3 cup vegetable oil

½ cup chili powder

½ cup cumin

Tblsp cayenne pepper

Tblsp garlic powder

Tblsp onion powder

Tblsp paprika

Salt & pepper to taste

 Sauté garlic and onion in a large pan, bottom coated with oil, over medium heat until onions are clear.

Add ground beef cook until done and add shredded pork.

Add jalapeños, tomatoes, beans, water and all seasonings.

Let simmer for at least and hour or more, stirring now and then, taste and add more seasoning as needed.

Massa for thickening  (add 4 Tblsp  Massa to 1 cup of water, stir until dissolved and pour into chili while stirring on low heat. If not thick enough to your taste add more)

 Serve with Onions, Cheese and Jalapeno for garnish.

Pork

 Take a two pound pork roast put it in the pressure cooker with ½ cup of water. Season it with some hot sauce on top (I use Cholula sauce from Mexico, you can buy it in the states, but, any hot sauce should work) and some Cajun seasoning sprinkled on top of the sauce. (I use Tony Chachere’s Creole seasoning, also from the states). Cook for 30 min. under pressure, let cool down and pull pork apart to add to Chile.
