Date Nut Muffin (M/V St. Elias)

 1 ½ cup dates, or any dried fruit

¾ cup White flour

¾ cup bran flakes

¾ cup boiling water

½ cup whole wheat flour

½ cup chopped pecans or walnuts

½ cup sugar

¼ cup vegetable oil (I use coconut oil)

½ tsp baking soda

½ tsp vanilla or almond extract

 Combine dates or other fruit chopped and boiling water, oil and extract. (let set to rehydrate dried fruit)

Mix together flour, bran and baking soda add fruit mixture and nuts.

Bake 12 minutes at 350 F.

Makes 12 muffins
