1 large head of romaine lettuce washed and torn in to pieces.
Use salad spinner if you have one. Make sure lettuce is dry.
4 anchovies filets
3-4 cloves of garlic
¼ cup of olive oil
2 tbl sp. Lemon juice
2 tsp. Worcestershire sauce
1 egg yolk
1 cup croutons
½ cup grated Parmesan cheese
Use a wooden salad bowl if you have one. Put anchovies in
bowl, then press garlic on top of anchovies and smash together
with a fork. Add half of olive oil and mix together. But egg
yolk and lemon juice into mixture and stir together. Add
remaining oil and Worcestershire and mix. Add lettuce to mixture
and toss until coated well. Then throw in croutons and Parm.
Cheese.
Do not put lettuce, croutons, & Parm into dressing until
ready to serve.
